Our red wines

Exclusively sourced from noble vine varieties, Merlot, Cabernet Franc, Cabernet Sauvignon, Petit Verdot and Malbec, red wines are vinified in order to combine being supple and fruity while young and offering complexity and "garde" while mature.

To achieve that the grapes are selecteted and collected fully ripe under strict temperature controlling. The maceration process that allows to extract the aromas, colour and tannins lasts up to 45 days under micro oxygenation (instead of the usual 15 days in classical wine-making).

AOC Bordeaux Supérieur

The cuvée "excentrique" is a rare cuvée for its originality being made up of 70% Petit Verdot, a great grape variety for keeping, also rare, and 30% Merlot.

Merlot aged in barrels to moderate the eccentricity of Petit Verdot. Small yield and selection of bunches give it a power and depth worthy of great vintages.

The cuvée "excentrique", which combines the fruity notes and the smoky side of the great "single Malts", is only bottled during great vintages.

To be discovered with game, stews, in general with characterful dishes. Or to forget for 10 years.

Our white wines

The dry whites are made from noble grape varieties: Sauvignon Blanc, Sauvignon Gris and Sémillon. Sauvignon brings fruitiness, semillon volume and longevity.
The grapes are picked during the freshness to preserve the aromas and, after sorting and crushing, are pressed (Sémillon) or macerated for 24 hours (Sauvignon) to concentrate the flavors.
Slow fermentation at low temperature and aging on lees will ensure volume and complexity.
Our dry white wines are free from residual sugars and acidity as the harvest is always performed at full ripeness. They therefore have no reason to cause a headaches or insomnia.

AOC Bordeaux Supérieur Moelleux

Château Valentons Moelleux is a product made from overripe Sauvignon Gris. It is less sweet than a Sauternes or a Monbazillac.

Fermentation at low temperature is followed by aging in barrels, which gives it notes of flowers (lime blossom, verbena) and spices (cinnamon, vanilla).

It can be enjoyed with foie gras, desserts, blue cheeses or as an aperitif.

Available: 2015

Clairet and Rosé

Bordeaux Clairet is made from red grape varieties which macerate for 48 hours, unlike Bordeaux rosé which is pressed immediately.
This maceration brings it fruity, color and fleshy. It is a "Rosé" of character.
Fermentation then takes place at low temperature and it is bottled after 3 months.
